“Il Borgo Del Gusto” Restaurant offers a cuisine based on Umbrian tradition, revisited and valued by our chefs and our products. The kitchen reflects in full the philosophy of the place, for this reason, many of the products are zero-mileage products, coming from the farm owned. The cooks produce bread, hand-made pasta (including the “Umbricelli” the famous pasta water and flour), buns and sweets. The products of our garden are cultivated according to the biological methodology. They are reared with chianina, Siena pigs, sheep and short-lived animals. Our main productions are: extra virgin olive oil, seasonal fruit, vegetables, honey “millefiori”, products such as apricot ham, turnip, saddle and tasty bacon. The capacity of the restaurant is about 120 people; the two rooms, with panoramic views, are furnished with distinctive furnishings and kits. Also, it is possible to organise tastings in the historic cellar of the villa Vogorides Ruspoli adjacent to the structure or poolside dinners to offer guests a wonderful view of the valley.
The Farm of the Borgo hosts selected farms in natural, semibrado and manure environments, such as Chianina breeds and Siena pigs. A dedicated area includes goats, sheep and poultry, hens and rabbits, pharaohs and geese. In open and greenhouse areas, fruit and vegetables are grown, while the fields are intended for cereals and forage. The passion for honey has led to the creation of horns in the fields for the production of the classic “Millefiori”. The company's products, besides being tasted at the "Borgo del Gusto" restaurant, are available on site and on-line (Orvieto Classico Doc and IGT Wine, cold squeezed extra-virgin olive oil, salami, cheese, jams, honey and compounds) It is possible to organise guided tours on the farm, also for educational purposes, and to participate in tasting tours in the old cellar of the princely Villa Laura (Vogorides Ruspoli).
The relais is located within an estate of about 250 hectares where is produced Orvieto Classic DOC Wine and Umbria Rosso IGT. We offer to our customers the products at Km 0 to be tasted in combination with our wines in the suggestive Etruscan cave within our farm. All products of our vegetable garden are grown according to organic cultivation. They are reared with chianina, sheep, Sienese pigs and short-lived animals.
